I created WineProse as an extension of the restaurant wine service experience. I want to provide a forum that enables Sommeliers and other wine educators to discuss their craft – providing a unique peak into their thinking around wine recommendations. The intention is to show that there may be a few simple “guidelines” as a starting point (light wines first, moving to heartier reds) – but that these are really just guidelines. Wine professionals have the opportunity to experiment all night long with pairings – and this is the on-line resource for those who want to learn from – or be inspired by - their collective experience. The idea that there is a correct pairing and an adventurous pairing is very intriguing to me. Why not change up the batting order - follow a red with a white? OH MY! Of course if it works do it. As a pallet cleanser, why not serve a margarita with Ceviche? What makes a classic wine from a classic region? What do you pair with it? As the old adage goes, rules are made to be broken. I am not trying to say break all the rules, but if you have to choose one bottle of wine to serve to a table of four and two people are having fish and two are having steak, what do you do? You are going to have to be creative. The table is sharing a charcuterie to start. How about beer? Well a cherry Lambic from a good producer would be perfect. Not the sweet faux ones that are mostly seen in the States but a true classic. Enough is enough, you get the idea.
