I created WineProse as an extension of the restaurant wine service experience. I want to convey that there are sommeliers out there that are human and enjoy the intricacies and adventure of the “pairing”. They are knowledgeable, passionate and personable. Not the stuck up snooty sommeliers of a bygone era. The idea that there is a correct pairing and an adventurous pairing is very intriguing to me. Why not change up the batting order…Follow a red with a white? OH MY! Of course if it works do it. As a pallet cleanser, Why not serve a margarita with Ceviche? What makes a classic wine from a classic region? What do you pair with it? As the old adage goes, rules are made to be broken. I am not trying to say break all the rules. But if you have to choose one bottle of wine to serve to a table of four and two people are having fish and two are having steak. What do you do? You are going to have to be creative. The table is sharing a charcuterie to start. How about beer? Well a cherry Lambic from a good producer would be perfect. Not the sweet faux ones that are mostly seen in the States but a true classic. Enough is enough, you get the idea. A few last thoughts. Definitely give producer and wines along with tasting notes when possible. Be professional, this is not a bashing site. If you don’t like it say so but be professional. Remember your name is on it for the world to see!
